Capitol Chicken
This is taken from an old Perdue Chicken recipe. It's fancy enough for company, but easy enough for a weeknight if you use boned chicken. I like it best when using chicken breasts with the rib bone.
1 pieces of chicken
2 t ground ginger
1/2 t oregano
2 T brown sugar
1 T flour
2 cloves slices garlic
1/2 C sherry (not creamed) or red wine
1/2 C soy sauce
1/4 C oil
1/4 C water.
Mix sauce by mixing dry ingredients and then adding liquids. Place chicken in a single layer, skin side up in shallow dish. Pur sacue over chicken. Bake uncovered at 350 for 1 hour (probably 30 minutes if using boneless chicken). Baste as needed. Serves 6
